2 garlic cloves
1 pc fresh ginger (about 2 cm)
2 Tbsps Lime juice
80 milliliters Oyster sauce
60 milliliters soy sauce
1 tsp dried Red pepper flakes
1 tsp ground Cumin
½ tsp ground cilantro
3 Tbsps brown sugar
2 Tbsps olive oil
2 Tbsps sesame oil
coarse Sea salt
freshly ground peppers
1 ½ kilograms Pork ribs
3 scallions
1 Red chili pepper
2 handfuls cilantro
1 Lime

Preparation steps

Peel and finely chop garlic and ginger.

Combine all ingredients for the marinade and whisk with 3 tablespoons of water, season with salt and pepper to taste. Rinse and pat dry ribs, coat with marinade and refrigerate for 1 hour.

Place ribs with marinade in a baking dish. Roast, covered, in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Reduce temperature to 180°C (approximately 350°F) and roast for another 45 minutes. During the last 10 minutes, uncover and let cooking juices boil slightly.

Rinse and dry scallions, cut into rings. Rinse chile pepper, remove seeds and ribs and cut into rings. Rinse cilantro, shake dry, pluck off leaves and chop coarsely. Arrange ribs with some sauce on a platter and sprinkle with scallions, chile pepper and cilantro. Cut lime into wedges and place alongside ribs. Serve with rice, if desired.
