2 Oranges
3 Tbsps soy sauce
6 Tbsps tomato puree
2 Tbsps vegetable oil
1 tsp honey
1 tsp finely grated ginger
1 bunch scallions
1 Red chili pepper

Preparation steps

1.

Bring a large pot of water to a boil, add the spare ribs, reduce the heat to a simmer and cook for about 45 minutes.

2.

Meanwhile, zest and juice the oranges. Whisk the orange juice with the soy sauce, tomato puree, vegetable oil, honey and grated ginger together.  

3.

Rinse the chile pepper, cut in half lengthwise, remove the seeds and chop finely. Rinse the scallions, pat dry and slice thinly. 

4.

Add the chopped chile pepper, sliced scallions and 2 tablespoons of orange zest to the marinade. 

5.

Remove spareribs from the water, drain well and place in a shallow baking dish. Pour the marinade over the ribs and refrigerate for 2-3 hours.  

6.

Place the ribs, meat side down, on a well-greased baking sheet, drizzle the marinade on top and place under a preheated broiler. Broil until a light crust has formed, remove from the oven and serve with rice.
