1 kilogram Porcini mushroom
For the marinade
250 milliliters water
500 milliliters White vinegar
3 Tbsps sugar
1 tsp salt
2 bay leaves
8 white peppercorns
1 Tbsp Mustard seed

Preparation steps

Rinse canning jars with very hot water and drain.

For the mushrooms: In a wide pot, bring water to a boil. Meanwhile, brush the mushrooms clean. Leave small mushrooms whole and cut large mushrooms into halves. Add the mushrooms to the boiling water, blanch for 2 to 4 minutes, then drain and immediately rinse with cold water to stop the cooking. Drain well.

For the marinade: Boil the water with vinegar and spices.

Meanwhile, add the porcini in layers in the jars. Pour the boiling marinade over the mushrooms, and immediately seal the jars. Turn the jars upside down to create a vacuum. After about 10 minutes, the jars can be turned upright.

5.

The porcini will keep for about 4 weeks.
