1 Tbsp freshly grated Parmesan (as desired)

Preparation steps

1.

Carefully rinse mushrooms with cold water, then immediately pat dry with paper towels. Slice mushrooms paper-thin and fan out, from cap to stem, on a serving plate.

Squeeze juice from lemon into a bowl. Gradually whisk in oil until emulsified. Drizzle mushrooms with dressing and season lightly with salt and pepper. Coarsely chop parsley and sprinkle over mushrooms.

3.

If desired, serve mushrooms sprinkled with freshly grated Parmesan.
