- 1 red chili pepper (sliced)
- 2 cloves garlic cloves (sliced)
- ⅓ cup black Olives (pitted)
- 1 sprig rosemary
- 5 Sage
- 2 sprigs thyme
- 1 stalk mint
- ⅞ cup olive oil
- salt
- peppercorns (lightly crushed)

Place the feta in a shallow dish. Sprinkle with chilli, garlic, olives, herbs, salt, peppercorns and olive oil.

Cover and marinate overnight in the refrigerator
