¼ cup butter (melted)
2 Tbsps olive oil
1 onion (finely chopped)
1 Tbsp balsamic vinegar
1 Tbsp light brown sugar
1 cup Feta
1 ¼ cups black Olives (pitted and halved)
To garnish
Arugula (leaves)

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Lightly butter a 20 cm|8" loose-based tart tin.

Line the tin with a layer of filo pastry. Lightly brush the pastry with melted butter, then repeat until all the filo sheets have been used, buttering each layer.

Heat 1 tbsp oil in a frying pan, then gently fry the onions for about 10 mins until golden and soft. Add the balsamic vinegar and sugar, then cook for a further 5 minutes until the juices are reduced and syrupy. Leave to cool.
4.
Spread the onion mixture over the pastry base. Crumble the feta over the top and scatter most of the olives over the feta, reserving a few olives for the garnish.

Drizzle with the remaining olive oil and bake for 20-25 minutes until the pastry is golden and crisp.
6.
Garnish with the remaining olives and the rocket leaves.
