1 Lime
4 Juniper berries
2 garlic cloves

4 Chicken breasts
1 small Savoy cabbage
100 grams dried Apricot
2 onions
20 grams butter
salt
20 grams Margarine
200 milliliters Chicken broth (Instant)
100 milliliters Whipped cream
1 pinch sugar
1 Tbsp cornstarch

Preparation steps

Rinse lime in hot water, wipe dry and finely grate the peel. Crush juniper berries and finely chop the peeled garlic. Mix both with the lime peel and coarsely ground pepper to taste.

Rub mixture over chicken breasts and marinate in the refrigerator, covered, for 30 minutes.

Meanwhile, trim and rinse cabbage and cut into strips. Cut apricots into strips. Peel onions and dice. Heat butter in a large pan and sauté the onions and apricots. Add dripping wet cabbage and season with salt and pepper. Cover and simmer about 30 minutes.

Heat margarine in a skillet, add the chicken breasts and sear on both sides over medium heat. Deglaze with broth and cream and cook 12-15 minutes.

5.

Squeeze juice from lime. Season the sauce with lime juice, salt, pepper and sugar and thicken with cornstarch mixed with a little water. Slice chicken breasts and serve with the sauce and the cabbage.
