75 grams Dark chocolate (about 60% cocoa)
2 Tbsps vegetable oil
1 lemon (untreated)
1 Orange (untreated)
300 grams Whipped cream (at least 30% fat content)
Cherries (for garnish)

Preparation steps

Chop white and dark chocolate and separate by type in small metal bowls, adding 1 tablespoon oil to each. Rinse lemon and orange and zest 1 tsp from each.

Melt white chocolate above a hot water bath and let cool slightly. Whip the cream and mix half with lemon zest and the other half with orange zest. Pour the cooled, still liquid white chocolate on the lemon cream. Fold the chocolate gently into the cream, cover and set in the refrigerator to cool.

Meanwhile, place dark chocolate in a water bath to melt and let cool slightly. Pour the cooled, still liquid chocolate on the orange cream. Gently fold chocolate into cream.

Distribute dark mousse on top of white. Carefully pull a fork from the bottom of the mousse up through the top. Cool for at least 2 hours. Place mousse in bowls and garnish with cherries to serve.
