7 ½ cups Sweet potato (washed; cooked through and cut into wedges)
Canola oil (for brushing)
salt (to taste)
freshly ground Black pepper (to taste)
4 Tbsps butter
3 Tbsps Maple syrup
1 pinch cayenne pepper

Preparation steps

In a medium skillet over medium heat, dry roast the chopped pecans until they smell nutty, about 2 to 3 minutes. Do not burn.

Prepare the grill for direct grilling and preheat to medium-high heat.

Brush sweet potato wedges with oil and season with salt and pepper. Brush grill grate with oil. Grill potato wedges, turning once, until nicely marked on each side.

In a small saucepan, melt the butter over medium heat. Add the maple syrup, cayenne pepper and toasted pecans and cook for for about 1 minute. Drizzle over sweet potato fries and serve.
