Preparation steps

Peel the sweet potatoes, then cut into finger thing pins. Blanch for 2-3 minutes in boiling salted water. Drain the sweet potatoes, rinse under cold water, and pat dry.

Heat the oil to 165°C (approximately 330°F) in a saucepan. The oil is hot enough that when you place a wooden spoon in the oil air bubbles rise to the surface. Cook the sweet potatoes, in batches, for 5 minutes until they are soft but haven't colored. Remove the sweet potatoes from the oil. Increase the temperature to 180°C (approximately 350°F). Fry the sweet potatoes for 2 minutes, in batches, until they are crispy and golden brown. Remove from the oil and drain on paper towels.

Season to taste with the sea salt and serve.
