125 milliliters water
100 grams sugar

3 ripe Mangoes (about 600 g)
Lemon balm

Preparation steps

1.

Combine the water and sugar in a pot and simmer until syrupy, about 5 minutes. Stir in the lemon juice and allow to cool.

2.

Peel 2 of the mangoes and remove the flesh from the pit. Place the mango and syrup in a blender, and puree until smooth.

3.

Place the mango mixture in an ice cream machine and churn until frozen.

4.

Peel the remaining mango, remove the flesh from the core and cut into slices.

5.

Scoop the sorbet into bowls. Garnish with the mango slices and lemon balm.
