Preparation steps

1.

Crumble the chile in a small pot of boiling water, simmer for 1-2 minutes, then drain.

Boil the brown sugar, orange juice, lemon juice, and 1 cup of water. Simmer for 1-2 minutes until the sugar has completely dissolved. Remove from the heat and let cool.

3.

Peel the mango, cut the flesh from the pit and puree in a blender with the citrus syrup. Add the chile and stir. Finish the sorbet in an ice cream maker. Or pour into a shallow metal bowl, cover and freeze for at least 3 hours, stirring frequently with a fork.

4.

To serve, scoop the sorbet into dessert glasses.
