3 large, ripe Mangoes
4 Tbsps lemon juice
4 Tbsps sugar
1 egg white
1 Tbsp Lime juice
honey (to taste)

Preparation steps

1.

Peel 2 mangoes, pit and slice and collect the juice. Puree the pulp and any juice with 2 tablespoons water and the lemon juice.

Press the puree through a sieve and stir in the sugar and the slightly beaten egg white.

3.

Freeze the mixture in an ice cream machine or place in shallow metal tray. Freeze about 3 hours, stiring every 30 minutes vigorously to prevent the formation of any large crystals.

4.

Peel the remaining mango and cut the flesh into very small cubes. Mix with lime juice and sweeten to taste with a little honey.

5.

Scoop out balls of the sorbet and serve with the diced mango.
