For the Strawberry sorbet
500 grams Strawberries
¼ l Sparkling wine
4 big, beautiful Strawberries
Strawberry leaves
For the mango sorbet
1 Lime
100 grams sugar
100 milliliters water
100 milliliters dry Sparkling wine
400 grams Mangoes
For the garnish
Lemon balm
Lime zest

Preparation steps

1.

For the strawberry sorbet, rinse strawberries, trim and puree in a blender.

2.

Mix puree in a shallow metal bowl with sparkling wine and freeze in the freezer. Stir well with a fork every 30 minutes. 

3.

Remove strawberry sorbet from the freezer and serve in chilled stemmed glasses garnished with lemon balm.

4.

For the mango sorbet, rinse lime in hot water, wipe dry and finely grate zest. Squeeze juice from lime.

5.

Mix sugar, lime zest, lime juice, and water in a saucepan, bring to a boil while stirring and simmer for about 3 minutes. Remove from heat, let cool and mix with sparkling wine.

6.

Chop mango and puree with sugar water mixture in a blender.

7.

Pour mango mixture into a shallow metal bowl and put in the freezer. Allow to freeze, stirring every 30 minutes.

8.

Serve mango sorbet in chilled glasses garnished with lime zest.
