250 grams sugar
1 tsp salt
½ tsp Cardamom
½ tsp fennel seeds

Preparation steps

1.

Peel the mangos, and remove the stones. Dice into small pieces. Rinse the kumquats, slice, and remove the seeds.

2.

Bring the fruit to a boil with the vinegar. Boil for 10 minuutes, then add the sugar, salt, and spices. Reduce the heat, and simmer for 40-50 minutes, stirring frequently. Cook until the chutney has become thickened and syrupy.

3.

Fill the prepared jars to the brim with the hot chutney, and seal tightly.
