1 chicken (approximately 1.5 kg)

1 Tbsp Pastry flour
3 Tbsps olive oil
1 onion
3 garlic cloves
4 carrots
250 milliliters dry white wine
150 grams dried Apricot
1 pc Cinnamon stick
3 fresh bay leaves

Preparation steps

Preheat the oven to 200°C (approximately 375°F) convection/ 220°C (approximately 425°F) convention.

Rinse the chicken, pat dry and cut into about 8 pieces. Season with salt and pepper and sprinkle with the flour. Saute in hot oil in a roasting pan until golden brown.

Meanwhile, peel the onion, garlic and carrot, dice the onion, halve the garlic and cut the carrots into slices. Remove the chicken pieces from the roasting pan and sauté the vegetables in it. Deglaze with the wine, season with salt and pepper, add the coarsely chopped apricots, cinnamon and bay leaves and return the chicken to the pan. Bake in the oven about 25 minutes, turning and basting occasionally and adding water if necessary.

Transfer everything to a serving bowl and serve.
