400 grams potatoes
1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
30 grams butter
1 l Vegetable broth
1 jar pickled Pumpkin (200 grams)
½ bunch parsley
4 Hot dogs

Preparation steps

Rinse lentils in cold water and drain well.

Rinse potatoes, peel and dice. Rinse soup vegetables, trim as needed, peel as needed and cut into cubes. Melt butter in a pot and briefly fry potatoes and prepared soup vegetables. Add lentils and broth. Cover and cook for about 40 minutes. Drain pumpkin in a colander, reserve juice, cut into 1 cm (approximately 1/2 inch) cubes. Add pumpkin and sausage to the pot, heat it and season with salt, pepper and pumpkin juice. Rinse parsley, shake dry and coarsely chop leaves. Serve lentil stew garnished with parsley.
