4 Chicken breasts (each about 150 grams)

peppers (freshly ground)
1 lemon (juice)
4 Tbsps Pastry flour
2 eggs
4 Tbsps breadcrumbs
6 Tbsps clarified butter
1 bunch frill parsley
Lemon peel (for serving)

Preparation steps

1.

Rinse chicken breasts, pat dry and cut diagonally into slices.

2.

Season chicken with salt, pepper and lemon juice. Dredge in flour, dip into beaten eggs and coat with the breadcrumbs. Slightly press the crumbs to adhere.

3.

Fry in clarified butter in batches until golden brown on both sides (about 2 minutes on each side), remove and drain on paper towels.

4.

Then fry parsley in the still-hot fat for a few seconds (caution: there is a risk of splashing!). Drain fried parsley on paper towels.

5.

Serve with lemon wedges.
