Fried Chicken
Ingredients
- For the chicken
- 4 Chicken thigh
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 250 milliliters dry white wine
- 4 untreated lemons
- 10 sprigs thyme
- 2 sprigs rosemary
- 2 Tbsps honey
- For the salad
- 150 grams mixed Lettuce (such as Lollo Biondo and arugula)
- 1 red Bell pepper
- 2 scallions
- 50 grams Radish
- 1 garlic clove
- 4 Tbsps olive oil
- 2 Tbsps lemon juice
- 1 tsp sharp Mustard
- 1 tsp honey
- salt
Preparation steps
Preheat the oven to 180°C (approximately 350°F).
Rinse the chicken and pat dry. Season with salt and pepper. Fry in hot oil, until brown on all sides. Add the white wine. Rinse the lemons, cut into wedges. Add the lemon wedges, thyme and rosemary sprigs to the chicken. Braise for 30-40 minutes in the oven. Add more white wine, as needed. During the last 10 minutes, brush the chicken with honey.
For the salad, rinse the lettuce and pluck into smaller pieces. Rinse the pepper, halve and cut into small pieces. Rinse the scallions and cut into rings. Rinse the radishes and cut into thin slices. Peel and finely chop the garlic. Mix the garlic, oil, lemon juice, mustard, honey and 2-3 tablespoons of salt. Season the dressing with salt. Transfer the salad to plates and pour on the dressing. Add the chicken to the plates and serve.
