200 grams sugar
150 milliliters water
350 milliliters lemon juice (from about 8 organic lemons)
2 egg whites

Preparation steps

In a saucepan, bring sugar and water to a boil. Let cool.

Mix lemon juice into sugar water. With a spoon, scrape out remaining pulp from lemon halves and discard. Whip egg whites until stiff and fold into liquid. Pour mixture into an ice cream maker and process according to manufacturer’s instructions. Alternatively, place mixture into a shallow metal pan and freeze until mixture is smooth, stirring vigorously every 30 minutes to prevent large ice crystals from forming. Scoop sorbet into lemon halves and return to freezer. Let thaw 10 minutes before serving.
