Preparation steps

Rinse fresh lemon with hot water and grate zest. Cut remaining four lemons in half and squeeze juice.

Combine sugar, lemon zest and wine or water in a saucepan and bring to a boil, stirring. Let stand for 5 minutes. Cool and strain through a sieve. Beat egg white until semi-stiff. Add lemon juice to wine mixture (water mixture) and mix well. Fold in egg white. Pour sorbet into a shallow metal bowl and freeze for about 4 hours, stirring occasionally.

To serve, place sorbet into bowls and garnish with lime or lemon slices.
