Preparation steps

1.
Slice the kumquats, remove the seeds and place the slices in the bottom of four glasses. Gently muddle the fruit with the handle of a wooden spoon to release the juice. Add ice to the top of each glass.
2.
Squeeze the oranges or clementines, sieve the juice and pour into the glasses. Top each one with a splash of soda and serve immediately.
