Preparation steps

1.
Using a zester, carefully remove the zest from the oranges in one thread and wrap around the handle of a wooden spoon to form spirals. Set aside for the garnish.
2.
Squeeze the oranges and place in a small saucepan with the lemon juice, honey and thyme. Heat gently until the honey has dissolved then strain through a fine sieve and place in the fridge to chill.
3.
Serve the punch over ice and garnish with the spirals of zest.
