3 Tbsps Soy creamer
3 Tbsps lemon juice
1 tsp Mustard
2 tsps Carob

2 Apple (Granny Smith)
40 grams Walnut
2 Tbsps flat-leaf parsley
1 tsp sugar

Preparation steps

1.

For the dressing: Drain the tofu and mash with the soy creamer, 1 tablespoon lemon juice, mustard and locust bean gum. Season with salt and pepper.

2.

For the salad: Peel the kohlrabi and grate. Peel the apples, cut in half, remove the seeds and grate. Mix the kohlrabi and apples with the remaining lemon juice.

3.

Chop the walnuts coarsely and mix into the kohlrabi and apple mixture along with the parsley and sugar. Season with salt and pepper.

4.

Arrange the kohlrabi salad on serving plates and drizzle with tofu dressing.
