- For the croutons
- 3 thick Bread
- 2 cloves crushed garlic cloves
- 2 Tbsps olive oil
- For the salad
- 2 cups new potatoes
- 1 Tbsp olive oil
- 4 slices Bacon
- 1 Romaine lettuce (torn)
- 1 Cucumber (diced)
- 1 ½ cups cherry Tomatoes (halved)
- For the dressing
- 1 clove crushed garlic cloves
- 1 tsp lemon juice
- ½ tsp English mustard
- 1 tsp Worcestershire sauce
- 2 egg yolks
- ⅜ cup extra virgin olive oil
- 1 pinch sugar
- 2 Tbsps grated Parmesan
- salt

- To garnish
- ½ cup Parmesan (shaved)

Preparation steps
1.
For the croutons: rub the bread with the garlic. Heat the oil in a frying pan and fry until crisp and golden. Drain on absorbent kitchen paper.

For the salad: cook the potatoes in a pan of boiling salted water until tender. Drain well and when cool enough to handle, cut into dice.
3.
Heat the oil in a frying pan and cook the bacon until crisp. Drain on absorbent kitchen paper and cut into small pieces.
4.
Put the lettuce leaves onto serving plates. Add the warm potatoes, sprinkle over the bacon, cucumber and tomatoes and the croutons.
5.
For the dressing: whisk all the ingredients together until thick. Season to taste with salt and pepper.
6.
Drizzle the dressing over the salad and scatter over the cheese shavings.
