24 ozs ground Kobe beef
coarse salt (to taste)
freshly ground Black pepper (to taste)
4 slices smoked Provolone cheese
4 Brioche
1 Tbsp melted butter
Lettuce
Tomatoes (slices)
Red onions
For Sweet Potato Fries
4 large Sweet potato (peeled and cut into 1/4 by 1/4-inch sticks)
2 liters Peanut oil
salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

For Hamburgers:

Moisten your clean hands with cold water and divide the beef into 4 equal portions. Form into a flattened ball. Season with salt and pepper.

Refrigerate until ready to cook.

Prepare the grill for direct grilling and preheat to high. Brush the grill grate with oil.

Place the prepared burgers on the hot grill grate. Grill for 5 to 7 minutes per side, or to desired preference.

Brush the rolls with melted butter and toast them on the grill for about 45 seconds. Assemble by layering the cheese, onion, tomato and lettuce on top on the burger.

For Sweet Potato Fries:

Rinse cut potatoes in a large bowl under cold running water; draining the bowl until the water becomes clear. Cover cut potatoes with 1-inch (2.54 cm) of water and cover completely with ice. Refrigerate for at least 1 hour or overnight.

Heat oil in a deep fryer to 325ºF / 160ºC. Preheat oven to 300ºF / 150ºC.

Remove the potatoes from the ice water and dry completely with paper towels or a clean kitchen towel. Using the basket, add fries in small batches, to the hot oil. Fry, stirring occasionally, until the fries are limp and golden brown, about 6 minutes. Drain the fries on paper towels. Season with salt and pepper. Keep warm in oven until all batches are ready.
