- 2 sprigs mint
- 4 ⅔ cups fresh Apricot
- 3 Kiwi
- lemon juice (from one lemon)
- 2 ¼ cups sugar

Preparation steps
1.
Strip the mint leaves from the stems, rinse and blot dry. Cut the leaves into narrow strips.
2.
Halve the apricots. Remove the pits and chop.
3.
Peel and quarter (lengthwise) the kiwis. Slice the quarters.
4.
Mix the apricots, lemon juice and sugar in a large bowl. Cover and allow to rest for 30 minutes so a juice forms.
5.
Put the apricots mix in a large pot. Bring to a boil while stirring and continue to cook for 30 minutes.
6.
Stir in the kiwis and mint.
7.
Fill the jars to the top with the jam and close immediately.
8.
Turn the jars upside for 5 minutes. Then turn right side up and allow to cool.
