16 ozs Chicken thigh
1 ½ cups cubed stewing Beef
3 cups chicken stock
cayenne pepper
3 Tbsps tomato puree
3 small potatoes (roughly chopped)
1 onion (chopped)
2 cups canned Tomatoes
½ cup fresh or frozen Lima bean (or butter beans)
1 Tbsp Worcestershire sauce
2 ½ cups canned Sweet corn (kernels)

Preparation steps

1.
Put the chicken and beef into a large pan with the chicken stock, plenty of salt and ground black pepper, cayenne pepper and tomato puree.

Simmer for 30 minutes, then remove the chicken thighs and cut the meat away from the bones, shred the chicken. Discard the bones and return the chicken to the pot.
3.
Add the potatoes, onions, canned tomatoes and lima or butter beans. Splash in the Worcestershire sauce, cover and simmer for 1 hour.
4.
Stir everything together, add 300 ml water and sweetcorn, stirring from the bottom to keep from scorching. Simmer for 20 minutes more until the meat and vegetables are tender.
