Preparation steps
1.
For the Kentucky hot toddy: put all the ingredients in a large pan and simmer gently for 30 minutes - do not boil.
2.
Remove the cinnamon sticks, allspice berries, clove and orange peel. Ladle into heatproof glass mugs. Add a cinnamon stick to each mug.
3.
For the cookies: beat the butter and sugar with an electric whisk until soft and creamy. Beat in the egg and mix well.
4.
Sift in the flour and baking powder to form a soft dough. Wrap in clingfilm and chill for 1 hour to firm up.
5.
Heat the oven to 180C,350F, gas 4. Grease 2 baking trays.
6.
For the filling: drain the raisins. Mix all the ingredients except the melted butter and egg yolk.
7.
Roll out the dough about 5mm|1/5" thick on a lightly floured surface and cut into 10 x 6.5cm|2 1/2" circles with a cookie cutter.
8.
Brush the dough circles with melted butter and place a little filling in the centre of each. Fold the dough over the filling to form a crescent shape. Press the edges well to seal.
9.
Place on the baking trays and brush with egg yolk. Bake for 15-20 minutes until golden. Cool on a wire rack.
