- 4 Tbsps vegetable oil
- 2 onions (finely chopped)
- 9 ozs Celery (finely chopped)
- 4 cloves garlic cloves (chopped)
- 1 tsp ground cilantro
- 1 Cinnamon stick
- 1 tsp allspice
- ½ tsp cayenne pepper
- 2 tsps Celery salt
- 71 ozs ripe Tomatoes (roughly chopped)
- 3 Tbsps tomato puree
- ⅞ cup white wine vinegar
- 1 cup caster sugar

Wash the bottles and lids in hot soapy water, rinse well and put in a low oven to dry and become warm.
Preparation steps
1.
Heat the oil in a very large pan and cook the onions and celery over a low heat for 5 minutes. Add the garlic, cook for a further 5 minutes, then add the spices and cook for 1 minute.

Stir in the remaining ingredients and bring to a boil. Reduce the heat and simmer, uncovered, for 1 hour, stirring occasionally until the liquid has reduced. Cool slightly.

Rub through a non-metal sieve into a bowl, then return to the pan and cook, stirring until reduced.

The ketchup will thicken a little when it cools, but if it seems very runny (this will depend on the juiciness of the tomatoes), return to the heat and cook a little longer.
5.
Pour into warm sterilised bottles or jars and seal tightly. Use within 6 months.
