- 71 ozs ripe Tomatoes (roughly chopped)
- 2 onions (roughly chopped)
- 12 ozs cooking Apple (peeled and cored weight, chopped)
- 2 cups white wine vinegar
- 2 ¼ cups sugar
- 1 tsp ground cilantro
- 1 Cinnamon stick
- 1 tsp allspice
- 3 Mace (whole blade)
- ½ tsp ground Black pepper
- 2 tsps Celery salt
- 3 Tbsps tomato puree
Preparation steps

Put the tomatoes, onions and apples into a large pan and bring to a simmer, stirring. Cook gently, stirring until reduced to a thick puree.

Rub through a nylon sieve into a bowl. Return the sieved puree to the pan and add the vinegar, sugar, spices and tomato puree.

Stir over a low heat until the sugar has dissolved. Bring to a boil and boil steadily until thickened - this will depend on the juciness of the tomatoes. Remove the cinnamon stick and mace.
4.
Put into warm sterlised bottles or jars and seal tightly. Use within 6 months.
