- 8 medium, baking potatoes
- ½ cup olive oil
- 1 Tbsp coarse salt
- peppers (to taste)
- ¾ cup Sour cream
- ½ cup cream cheese (softened)
- ¼ cup heavy cream
- 2 tsps fresh Dill (minced)
- 3 Tbsps fresh Chives (minced)
- salt (to taste)
- peppers (to taste)

Preparation steps
1.
Preheat oven to 350 degrees F.

Clean the potatoes well with a brush. Score the potatoes using a knife to make an X shaped mark in each (about 1/8” deep). This will allow steam to escape.
3.
Place the potatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper and mix to coat. Place in oven and bake for about 1 hour or until potatoes are easy to pierce with a fork.
4.
Meanwhile, mix all ingredients for herb dip together until smooth. Refrigerate, covered with plastic wrap, until ready to serve. Serve baked potatoes hot with dip.
