Italian-style Turkey with Herbs

6 Turkey escalope
1 cup fresh Mozzarella (cut into 12 slices)
12 sprigs Sage (leaves picked)
1 lemon (juiced)
4 Tbsps olive oil

Preparation steps

1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Spread out the turkey escalopes on a chopping board. Flatten them with the side of a large knife or a pallet knife.
3.
On each escalope lay 2 slices of mozzarella and a couple of sage leaves. Season with some salt and pepper. Roll up the escalopes and use a cocktail stick to hold them together.
4.
Cut six 15 cm x 10 cm lengths of baking parchment or greaseproof paper.
5.
Place each escalope onto a piece of paper, sprinkle with some more salt and pepper and a drizzle of olive oil.
6.
Remove the cocktail stick and then carefully roll the escalope into the paper to form a nice parcel. Fold the edged together to form a seal.
7.
Place the parcels on a baking tray and cook for 30 minutes.
8.
Serve in the paper with seasonal vegetables.
