300 grams mixed Lettuce (such as feldslata, lollo rosso, lollo bianco, curly endive, etc.)
2 Tbsps Pearl onion
12 Cornichons
4 Tbsps black Olives (pitted)
200 grams cooked Italian sausage
4 Tbsps olive oil
2 Tbsps white balsamic vinegar
1 tsp Dijon mustard
salt
freshly ground peppers
400 grams Goat cheese (log)
Pastry flour (for dusting)
250 grams smoked Pancetta
2 Tbsps scallions

Preparation steps

Rinse the lettuce, spin dry and place on a large serving platter. Drain the pearl onions, cornichons and black olives and arrange on the serving platter. Cut the sausage into slices and distribute over the lettuce. Whisk together the olive oil, vinegar, Dijon mustard, salt and pepper. Drizzle over the salad.

Cut the goat cheese into 1-1.5 cm (approximately 3/8-1/2 inch) slices and dust with a bit of flour. Cut the pancetta into slices and fry in a large skillet until crisp. Remove from the pan and sprinkle over the salad. Brown the goat cheese slices in the same pan until golden brown on both sides. Place on the salad, garnish with chopped chives and serve.
