Ingredients

- 800 grams Beef
- 3 Tbsps vegetable oil
- 2 Tbsps Pastry flour
- salt
- freshly ground peppers
- 1 pinch cayenne pepper
- 3 carrots
- 1 Leek
- 1 garlic clove
- 8 shallots
- 1 Tbsp Tomato paste
- 350 milliliters Guinness (alternatively dark beer)
- 3 thyme
- parsley (for garnish)
Preparation steps
Cut beef into bite-sized cubes and mix in a bowl with 1 tablespoon oil. In a second bowl, mix flour with salt, pepper and cayenne pepper and then roll beef in flour mixture.
Peel carrot and cut into pieces. Rinse leeks, trim and cut into thick rings. Peel garlic clove and shallot.
Heat remaining oil in a large, deep pan, add beef to the pan and sear on all sides. Add shallots and garlic, add to the pan and fry for about 1 minute while stirring. Mix tomato paste with 2 tablespoons water in a bowl, pour over beef and mix. Reduce the heat, cover and simmer for about 5 minutes over medium heat. Add 1/3 of beer, bring to a boil, stir vigorously, add remaining Guinness, carrots and thyme. Cover pan, reduce the heat again and simmer over low heat for 2-3 hours while stirring occasionally. Add leeks, stir and simmer for approximately 30 minutes and season to taste. Serve garnished with parsley leaves. Serve with mashed potatoes if desired.
