1 stalk Leeks
5 Tbsps vegetable oil
600 grams lamb (leg, stew meat)
1 ½ liters Beef broth
500 grams potatoes
300 grams Savoy cabbage
salt
freshly ground peppers
1 bunch parsley
2 sprigs fresh thyme (or 1 teaspoon dried)

Preparation steps

Cut the meat into bite-sized cubes. Peel the onions and garlic and chop coarsely. Rinse and trim the leeks and cut the white and light green part into rings. In a large pot, heat the oil. Add the onion, garlic and leek and sauté briefly.

Add the lamb and sear over high heat on all sides. Pour in about 2/3 of the broth (the meat should be covered). Simmer over low heat for about 30 minutes. Peel the potatoes and cut into small cubes. Rinse the cabbage, trim and chop. Add the potatoes to the pot and pour in some more broth if necessary.

Simmer for another 20 minutes. Stir in the cabbage and cook until done, about 15 minutes. Season with salt and pepper. Rinse the parsley and thyme, shake dry and finely chop the leaves. Serve the stew in bowls and garnish with fresh herbs.
