- 3 cups granulated sugar
- 5 eggs
- 3 cups cake flour (sifted)
- 2 Tbsps Lemon extract
- 1 tsp pure vanilla extract
- ¾ cup carbonated lemon-lime soda (Seven-Up works well)
- For Lemon Glaze
- ⅔ cup powdered sugar
- 1 Tbsp lemon juice (plus more if necessary)

Preparation steps

Preheat oven to 325º F. Coat a tube pan with nonstick vegetable spray and dust lightly with flour.

In a large bowl, cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition.

Gradually add cake flour, mixing well until smooth. Stir in lemon and vanilla extracts. Fold in lemon-lime soda.

Pour batter into the prepared tube pan. Bake for about 60 minutes, or until a cake tester inserted in the middle of the cake comes out with just a few moist crumbs attached.

Let cool in the pan on a wire rack for about 10 minutes. Turn out cake and allow to cool completely before adding glaze.

In a small bowl, combine confectioners' sugar and lemon juice together, stirring until smooth and lump free. Drizzle over completely cooled cake.
