75 grams lamb's lettuce
1 Papaya
1 tsp pickled, green peppers
3 Tbsps Crème fraiche
8 slices Whole Grain Toast

Preparation steps

1.

Halve the avocados and remove the pits. Loosen the flesh from the skin and purée with the blender. Peel the onion and chop very finely. Stir in the avocado purée and season with hot-pepper sauce, salt and lemon juice.

Rinse and trim the lettuce, shake dry and tear into smaller pieces. Halve the papaya, scrape out the seeds, peel and cut into thin columns.

Crush the green pepper with a fork slightly, mix with the créme fraîche and season with salt.

Toast the bread.

Spread 4 slices of toast with the avocado cream, cover with lettuce leaves and papaya and spoon some crème fraîche on top.

Place the remaining slices of bread on top and serve the sandwiches cut diagonally.
