- 4 slices Whole Wheat Toast
- 1 tsp Tomato paste
- Endive
- Chives
- 2 Tomatoes
- 1 Avocado
- lemon juice
- salt
- freshly ground pepper
Preparation steps

Toast the bread and let cool. Brush one side of the bread with tomato paste. Rinse and spin dry the endive. Rinse the chives, shake dry and cut into small rings. Rinse, core and slice the tomatoes. Halve the avocado, remove the pit and peel the avocado. Cut the avocado into wedges and sprinkle with lemon juice.
Top 2 slices of toast alternately with lettuce, tomato and avocado wedges. Season with salt and pepper and sprinkle with chopped chives. Top with the remaining slices of bread and cut on the diagonal.
