If you want to cut down on cook time, you can purchase ready-made pizza dough instead of making your own.

Ingredients

For the dough
1 ¼ cups Bread flour
1 ¼ cups all-purpose flour
1 tsp active dry yeast
1 tsp salt
2 Tbsps chopped, mixed Fresh herbs
cup warm water
1 Tbsp olive oil
For the filling
light olive oil cooking spray
2 onions (sliced)
4 ozs button Mushrooms
14 ozs canned Artichoke hearts (drained)
8 cherry Tomatoes (halved)
To garnish

Preparation steps

1.
For the dough: mix together the flours, yeast and salt in a mixing bowl. Stir in the herbs. Make a well in the centre and pour in the water and oil. Mix to a soft, fairly wet dough.

Turn onto a lightly floured surface and knead for 5 minutes until smooth. Put into a lightly greased bowl, cover with a tea towel and leave to rise until doubled in size - about 1 hour.

Heat the oven to 400°F. Spray a tart tin or flan dish about 9" in diameter with oil.

Quickly knead the dough and roll out into a large round and line the tin.

For the filling: spray a frying pan with oil. Add the onions and mushrooms and cook over a low heat until almost tender. Drain off the pan juices and cool for 10 minutes.

Toss the onions and mushrooms with the artichoke hearts and tomatoes and put into the dough case. Spray lightly with oil and bake for 15-20 minutes until the dough is golden and the filling is piping hot. Garnish with rocket.
