1 handful Dill (with flowers)
1 handful oregano
1 rosemary
3 red chili peppers (fresh or dried to taste)
2 tsps black peppercorns
2 tsps white peppercorns
2 tsps Mustard seed
2 centimeters ginger
800 milliliters Vinegar (such as cider vinegar)

Preparation steps

1.

Rinse the herbs and chiles and pat dry. Combine the peppercorns and mustard seed. Peel the ginger and cut into slices.

Now put the dill flowers and fresh chiles in a small bottle (450 ml, approximately 1 pint). Add about half of the pepper-mustard mixture and pour 400 ml (1 2/3 cup) of vinegar. Close the bottle tightly.

3.

Into the second bottle put oregano, rosemary, ginger and remaining pepper and mustard. Fill also with vinegar and close.

4.

Leave both bottles about 3 weeks on the window sill (sunny and warm). Then filter and refill into prepared bottles. Store in a cool and dark area.
