½ organic lemon (zested and juiced)
125 milliliters Canola oil
2 Tbsps finely chopped Fresh herbs (such as chives and parsley)

Preparation steps

1.

All the ingredients for the mayonnaise should be at room temperature.

Combine the egg yolk with the salt, mustard and 1 tablespoon of lemon juice and mix vigorously. Stirring with a whisk or a hand mixer, add a few drops of oil and then slowly pour in the rest of the oil in a thin stream.

Only add as much oil as is necessary for it to immediately bind with the egg yolk and form a creamy mayonnaise.

Stir in the lemon zest and herbs and season with lemon juice, salt and pepper.

Before serving, cover and chill in the refrigerator.
