1 whole chicken (about 1.4 kg; oven-ready)
2 handfuls Italian Fresh herbs (rosemary, thyme, sage)
1 lemon
2 shallots
2 garlic cloves
2 Tbsps olive oil
salt
peppers (from the mill)
1 Tbsp honey
2 Tbsps olive oil
125 milliliters dry white wine

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Wash the chicken and pat dry. Rinse the herbs and shake dry. Pluck a few of the leaves and chop. Rinse the lemon and cut in half. Squeeze one-half for juice and cut the other half into slices. Peel the shallots and cut into eighths. Peel and mince the garlic. Season the inside of the chicken with salt and pepper. Fill with the shallots, lemon slices, garlic, and all the unchopped herbs. Tie the legs together. Whisk the lemon juice with the honey, olive oil, salt, pepper, and the chopped herbs. Brush the chicken with the dressing.

Place the herb chicken in a baking dish, pour the in wine and bake in preheated oven for about 1 hour. Frequently baste the chicken with its juices and, as needed, water.

Serve with a fresh tomato salad.
