- 1.333 cups vegetable stock
- 1 ⅛ cups Bulgur
- 2 red tomatoes (diced)
- 2 yellow tomatoes (diced)
- 1 bunch parsley (roughly chopped)
- 1 bunch cilantro (roughly chopped)
- 1 Red onion (diced)
- 3 Tbsps lemon juice
- 5 Tbsps olive oil
Preparation steps

Place the stock in a pot and bring to the boil, add the bulgur and and simmer on a low heat for around 30 min.

Mix together the bulgur, tomatoes, herbs, onion, lemon juice and oil and season with salt and ground black pepper. Arrange in bowls and serve.
