600 grams Blood sausage
100 grams butter

Preparation steps

1.

Peel, rinse and cook potatoes for 25-30 minutes in boiling salted water. Peel onions and cut into thin rings. Peel apples, cut into thin slices and sprinkle with a little lemon juice.

Remove blood sausage from casing and cut into 3 cm (approximately 1 inch) thick slices. In a pan, melt 30 grams (approximately 1 ounce) of butter and fry sausage for about 10 minutes. Season with salt and pepper.

In a second pan also melt 30 grams (approximately 1 ounce) butter, add apple slices and fry for 6-8 minutes on both sides until golden. Remove and keep warm and cook onion rings in the same pan until also golden brown.

Drain cooked potatoes, let evaporate and press through a potato ricer. Stir in milk and remaining butter and season with salt, pepper and nutmeg. Serve mashed potatoes with sausage and apple slices on warmed plates, drizzle with a little melted butter and serve topped with the onion rings.
