1 Tbsp lemon juice
70 grams Smoked bacon
600 grams Blood sausage
1 Tbsp clarified butter
50 grams butter
150 milliliters milk
freshly ground peppers

Preparation steps

1.

Peel and rinse the potatoes and cook in a pot of boiling salted water until knife-tender, about 30 minutes.

Meanwhile peel, quarter and core the apples. Cut the quarters into wedges and sprinkle with the lemon juice.

Dice the bacon finely. Remove the casings from the blood sausages and cut into 1 cm (approximately 1/2-inch) thick slices.

Heat the clarified butter in a skillet and saute the bacon until golden brown, 3-4 minutes. Add the sausages to the pan and with a spatula, flatten each slightly. Saute about 2 minutes on each side. In another pan, saute the apple wedges in 1-2 tablespoons of butter until golden brown and tender.

Drain the cooked potatoes, let the water evaporate and transfer to a bowl. Add the milk and stir in the remaining butter. Season with salt, pepper and nutmeg and mash.

6.

Divide the mashed potatoes, apple wedges and the blood sausages among plates. Spoon the bacon and the pan drippings over the mashed potatoes. Season lightly with salt and pepper and serve.
