Heaven and Earth (Foie Gras with Apple and Mashed Potatoes)
Rinse, boil and peel potatoes, then squeeze through a ricer. Rinse, core and thinly slice apples. Drizzle with lemon juice and set aside. Heat milk and stir into potato puree. Stir in half of the butter and season to taste with salt, pepper and nutmeg. Finally stir in the olive oil.
Sprinkle apple slices in sugar and saute in 2 tablespoons butter until golden brown. Remove from pan and reserve. Rinse foie gras and pat dry. Slice and saute in the remaining butter. Remove from pan and season with salt and pepper. Deglaze pan with Calvados. Add beef stock and reduce by half. Pour sauce through a strainer or sieve. Season with salt and pepper.
Place mashed potatoes on plate. Arrange foie gras on apple slices. Drizzle with sauce and serve immediately.
