- ⅓ cup Pancetta (or smoked streaky bacon)
- 1 onion (peeled and finely chopped)
- 2 Celery (finely chopped)
- 2 carrots (peeled and finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 potatoes (peeled and finely chopped)
- 2 Tomatoes (peeled and finely chopped)
- 6 cups chicken stock
- 2 ½ cups salad (such as cavolo nero or Savoy cabbage, finely sliced)
- 2 cups Pasta
- salt
- peppers
- Parmesan
- extra-virgin olive oil

... Use a can of chopped tomatoes rather than fresh for a more intense tomato flavour – or omit entirely for a fresher-flavoured soup.
... Use finely diced courgettes or green beans in season, adding them in with the pasta.
Preparation steps
1.
Heat the oil in a large pan and fry off the pancetta until the fat runs and it starts to turn golden.
2.
Add the vegetables in the order given, giving each one a good 5 minutes to cook without colouring, stirring regularly, before adding the next one.
3.
Pour in the stock and bring to a gently simmer, then cook very gently for about an hour.
4.
Add the greens and the pasta and cook for a further 30 minutes. Adjust the seasoning.
5.
Serve hot, warm or even room temperature sprinkled with Parmesan and drizzled with olive oil.
