- 2 Tbsps olive oil
- 2 shallots (chopped)
- 2 sticks Celery (chopped)
- 2 cloves garlic cloves (chopped)
- 4 rashers Bacon (chopped)
- 2 medium carrots (peeled and chopped)
- 1 medium potato (peeled and chopped)
- 1 Zucchini (chopped)
- 4 cups vegetable stock
- 5 ozs Farfalle
- 2 cups canned Kidney beans (drained and rinsed)
- 2 Tbsps chopped parsley

Preparation steps
1.
Heat the oil in a large pan and gently cook the shallots, celery and garlic until soft.

Add the chopped bacon, cook for 2 minutes then add the potato and cook for 1 more minute.
3.
Add the courgette, pour in the stock and bring to a boil. Season with salt, simmer for 5 minutes then add the farfalle and kidney beans and simmer for a further 8-10 minutes or until the pasta is al dente and the vegetables are tender.
4.
Season with pepper and a little more salt if necessary then add the parsley and serve with toast.
