2 Tbsps Canola oil
2 Tbsps Chile oil
4 Tbsps White vinegar
1 pinch sugar

Preparation steps

1.

Cook bacon until golden brown and crispy in a hot pan. Drain on paper towels. Rinse beans and blanch for 6-8 minutes in boiling salted water, rinse in cold water and drain well, cut into pieces. Rinse and spin dry arugula, tear into smaller pieces, if needed. Cook eggs until hard-boiled, rinse in cold water and peel, halve lengthwise.

Peel shallot and chop finely. Combine with canola and chili oils and vinegar, season with salt and sugar.

Combine beans with arugula and arrange on plates. Tear bacon into small pieces and sprinke over, arrange eggs on top. Drizzle salad with the dressing. Rinse and shake dry chives, cut into rings and sprinkle over salad. Serve.
